The classic biryani gets a twist at Saffron, the JW Marriott Hotel, Mumbai’s Indian restaurant from 23rd July to 3rd August. Chef Iqbal uses unconventional ingredients to add a twist to an otherwise classic dish perfect for the ongoing rainy season.
The menu for non-vegetarians ranges from the simple Murg Dum Biryani (a saffron pulao of basmati rice, yoghurt-braised chicken and fragrant spices) to the classic Kacche Gosht Ki Biryani (basmati with the choicest marinated mutton cooked on the dum) to the highly exotic Lobster Ki Biryani (cooked with lobster and enhanced with saffron and mint leaves). The Chef also presents interesting options like Jheenga Dum Biryani (a rice delicacy of freshwater prawns cooked with the finest basmati) and Macchi Ke Biryani (freshwater fish and basmati rice cooked together and enhanced with ginger juliennes and mint leaves). All biryanis are served with Dahi Ki Chutney, Mirch Ka Saalan and the guest’s choice of raita.
Vegetarians have choices like Khumb Ki Biryani (aromatic long grain basmati and fresh mushrooms cooked on the dum), Kofta Biryani (cottage cheese dumplings cooked with basmati rice served with burhani raita) and Aloo Dum Biryani (stuffed potatoes cooked with basmati rice) among others.
